Halibut with Strawberry Salsa

Halibut is a large bottom fish that looks like flounder but it’s a whole lot bigger. It has a mild taste and a meaty texture. Unfortunately, halibut is a little expensive and can be hard to find. So feel free to substitute with any other white fish. I’ve also served grilled chicken with the strawberry salsa when I didn’t have fish.

Serves 4


1 1/2 cups sliced strawberries
1 jalapeño pepper, seeded and diced
1 tablespoon lime juice
2 tablespoons chopped cilantro
1/3 cup diced red onion
1 tablespoon honey
1 tablespoon olive oil
1 1/2 pounds halibut
olive oil
salt and pepper to taste

For Salsa: Combine strawberries, jalapeño pepper, lime juice, cilantro, red onion, honey and olive oil, in a bowl and set aside.

For Halibut: Preheat barbecue. Oil grill grate with vegetable oil. Lightly brush fish with olive oil and season with salt and pepper. Cook 6 minutes per side or until cooked. Serve with salsa.
