Changing the formula of the recipe is not easy, because baking is a kind of science, one thing reacts with another. So you just can’t change the sugar into honey with the same amount. Because the honey has more water than sugar, mostly the basic way to change the sugar into a syrup or honey is dividing the original amount with 0.80. For example, if the original recipe use 100g of sugar, after you divide it, the number will be 125g, so you will get the amount of the honey that you will use. But the honey or syrup has 20% of water so the extra weight that you get like in this example “25g” will be the amount that you have to reduce the liquid from the recipe too. ^^ But this is just a guideline, the exact amount that you will change will depend on each recipe and the texture or taste that you want too.
Ok, we will stop talking about the science and calculation now, hehe. This is where the idea from, I want to give her the recipe that uses a lot of honey and make her happy with her baking so I played with some cookie recipe and turn out into this one ^^. The honey that you use will be important too if you can choose the one that you love its taste and smell (because you will use a lot of it). For the salt that will be sprinkled on top, you can use or omit it, salt always goes well with nut, but without it, the cookies still taste good.
Serve it with a glass of milk, I think they are the best companion, that everybody loves.

300 g …………………………. All-purpose flour
1 tsp ……………………………. Baking soda
120 g …………………………… Unsalted butter
1/4 tsp ……………………….. Salt
250 g …………………………… Honey
1/2 tsp ………………………… Vanilla bean paste
250 -300 g ………………….. Chunky peanut butter
……………………………………. Maldon sea salt, for sprinkle over the cookies (optional)
* Use 300g of peanut butter for less sweet cookies
Half batch
150 g …………………………. All-purpose flour
1/2 tsp ………………………. Baking soda
60g …………………………… Unsalted butter
………………………………… Pinch of salt
125 g …………………………… Honey
1/2 tsp ………………………… Vanilla bean paste
125-150 g ……………………. Chunky peanut butter
……………………………………. Maldon sea salt, for sprinkle over the cookies (optional)
Preheat the oven to 180°C
Line 3 baking sheet with baking paper or Silpat.
Sift together the flour and baking soda, set aside.
Beat the butter and salt until soft, add the honey and beat until combined.
Add the vanilla bean and peanut butter and beat until smooth.
Pour the flour mixture into a bowl, and mix until smooth.
Scoop with scoop no.20 (or shape into a ball about 5 cm in diameter), and press lightly with a fork. Sprinkle with Maldon sea salt, if using.
Bake for 14-16 minutes or until golden brown, let the cookies rest on the baking sheet for 5 minutes before transferring to a wire rack.
