 Baking always makes me happy, not only from their delicious flavor, haha, but there are a lot of fun, from the time that I use for deciding, making, decorating and most of all “giving”.

Jam Sand Cookie Pops

I just got this book ………………….. last week, and really want to try everything, hehe. I know that the real reason for me to buy it is the mold that come with a book, it’s so cute “I JUST CAN’T RESISSSSSSSSSSSSSSST IT”.  So I bought it as usual, haha.
It’s quite a crazy reason, but I’m happy that I got it, because the book is full of cute sweets. First I want to make something that uses the silicone mold (well, I want to use it, ^^), but when my niece saw this cookie recipe she told me that she want this one (and try to grasp it from the book, haha), so I knew that I had to make it!

It’s not hard to make it at all, and with a food processor you life will be easier, just put the ingredients in the bowl, step by step and you’ll get a cookie dough.
The most important part is letting it cool, and cutting it. Don’t rush, make sure that the dough is cool, or it will be very hard to move it around, and will lose its shape. You can use any flavor of jam that you want for me, the plain one has strawberry jam and chocolate one is orange marmalade. 
In the end I got more cookie than my niece can eat by herself, so I packed in and gave it as a gift (for the people at a bank, I didn’t give them a new year gift yet).
But I didn’t tell you that you have to give it away, hehe, it’s not bad to keep all of the cookies, because you will have a good time enjoy it with a cup of coffee or tea, and I know that you will be happy that way too.

Note: I think the cookies are very cute and can’t stop myself from making some funny photo, haha!

Jam Sand Cookie Pops
Makes about 20-30 
(it depends on the size of your cookie cutter)


Plain cookie
160g ………………………….. Cake flour
1/2tsp ……………………….. Baking powder
1/8tsp ……………………….. Salt
75g …………………………….. Unsalted butter, cold, cut into small cubes
70g …………………………….. Icing sugar
1 …………………………………. Egg yolk
1tbsp ………………………….. Water
Chocolate cookie
150g ………………………….. Cake flour
25g ……………………………. Cocoa powder
1/2tsp ……………………….. Baking powder
1/8tsp ……………………….. Salt
75g …………………………….. Unsalted butter, cold, cut into small cubes
70g …………………………….. Icing sugar
1 …………………………………. Egg yolk
1tbsp ………………………….. Water


……………………………………. Your choice of jam
……………………………………. Wood sticks

 Make a plain cookie dough
Put flour, baking powder and salt into a bowl of a food processor, process to combine.
Add the cold butter and process until the mixture looks like a fine bread crumbs, add the icing sugar and process to combine.
Add the water and egg yolk and process until the dough come together.
Warp with plastic and refrigerate for 1 hour.

  Make a chocolate cookie dough
Put flour, cocoa powder, baking powder and salt into a bowl of a food processor, process to combine.
Add the cold butter and process until the mixture looks like a fine bread crumbs, add the icing sugar and process to combine.
Add the water and egg yolk and process until the dough come together.
Warp with plastic and refrigerate for 1 hour.

Preheat the oven to 170 °C
Line the baking sheet with non-stick baking paper or silpat.
Roll the dough until 3-4mm thick and cut with cookie cutter.

Place in the prepared baking sheet,  use small cookie cutter cut out the center of half of the cookies.
Place the wood stick in on the cookie.

Place the cookie dough (that had been cut the center out) on top of the wood stick.
Spoon a jam over into the hole. 
Cover with the cut out center.
Bake for 15-20 minutes, depend on the size of your cookies.
