One dough of bread 2 kinds of baguette: Fruit and nut baguette, Chocolate chips baguette

Bread baking is one of my life pleasure, if you ever bake bread by yourself you will agree with me ^^. Watching the simple ingredients turn into something delicious with your own hands, it’s magic.

This time, I think it’s double magic, hehe, because you make only one dough of baguette and turn it into 2 kinds of it ^^.  – Fruit and nut baguette  and  Chocolate chips baguette –
I know that if you look at the recipe you can see that it’s not traditional, it has both egg and milk the ingredient list too, but do you really mind about it if it’s delicious, haha.

The thing that catch my attention is with only one basic recipe, and a little bit of twist in the ingredients, she can turn it into 9 kinds of baguette, sounds good!
I choose to make 2 kinds of it today, actually because I saw that there are egg and milk in the dough, I can expect the bread too be softer than the traditional recipe too.
And I’m right ^^, my family really enjoy the bread when it just comes out of the oven, soft on the inside and a bit chewy on outside, “Delicious!”, this is what my sister say.
Serve warm with a cup of coffee, it will be another great morning for you.



      
– Fruit and nut baguette  –  Chocolate chips baguette –
Makes 4 

Starter
3g …………………………….. Instant yeast
300ml ………………………. Cold water
325g …………………………. Bread flour


Dough
………………………………….. Starter
5g ……………………………… Instant yeast
200ml ……………………….. Cold water 
100ml ……………………….. Milk
1 ……………………………….. Egg
1tbsp …………………………. Salt
1tbsp …………………………. Sugar
450g-550g ………………… Bread flour


For Chocolate chips baguette
150g ………………………….. Chocolate chips


For Fruits and nuts baguette
100g ………………………….. Dried fruits, coarsely chopped
50g ……………………………. Nuts of your choice, coarsely chopped

For the starter:
Mix the flour and yeast together, add water and mix until the dough is smooth.
Cover with plastic and let it rise overnight in the refrigerator.

 Make the baguette:
Mix the salt, egg, milk, water, sugar and yeast together.
Put the flour (you may not need all of them, start by 450g and add more if it too sticky) into the starter bowl and pour the egg mixture into the bowl, stir until moisten.

 Take the mixture out of the bowl and knead until smooth. See how to knead here.

 Divide the dough into 2 equal part.
Mix 1 part of dough with chocolate chips and put in the oiled bowl. Cover and let the dough rise for 1 1/2 hours.
Then cut into 2 piece and shape the dough into long baguette. See how to form a baguette here.
Cover with damp cloth and let the dough rise for 1 hour.


Mix the rest of dough with dried fruit and nut and put in the oiled bowl. Cover and let the dough rise for 1 1/2 hours.
Then cut into 2 piece and shape the dough into long baguette. See how to form a baguette here.
Cover with damp cloth and let the dough rise for 1 hour.


Meanwhile preheat the oven to   240°C 
Bake for 10 minutes, then lower the heat to  200°C and bake for another 20 minutes.
