I always turn to cookie for comfort, both while making it and eating it.
I remember the first time I made cookie, I didn’t make it from scratch, it came from the bag of ready mix Betty Crocker, it’s easy but while baking I read the package and started thinking that why I have to buy something like this, -*- . The ingredient is simple and it’s so easy to make, you don’t need any skill or special equipment, just your heart ^^. So after that I started baking from scratch instead! This time I make peanut butter chocolate chips cookie, both of my favorite flavor in one piece of cookie. I choose to bake it twice to make it drier, but don’t try to bake it longer so you don’t have to bake it again. You need to make the cookie puff and fall, if you bake it longer for the first bake, you will get little cake instead. But if you want soft bake cookie, just stop after first bake, the cookie will be soft and delicious too.
I use salted butter for this recipe, because the salt and peanut butter are great companion ^^.
100g …………………….. Salted butter
90g ……………………….. Granulated sugar
85g ……………………….. Brown sugar
1 ……………………………. Egg
1tsp ……………………….. Vanilla extract
1 1/4tsp ………………….. Baking soda
200g ………………………. All propose flour
150g ……………………….. Chunky peanut butter
70g …………………………. Chocolate chips
Preheat oven to 170°C.
Line baking pan with baking paper or baking mat.
Beat the butter until soften, add both of the sugar beat until combine.
Add the egg and vanilla extract, beat until combine.
Add the peanut butter beat until combine.
Sift the flour together with baking soda into the bowl and pour the chocolate chips into the bowl, fold to combine.
Use 5.5cm scoop, scoop the cookie dough onto the prepared baking sheet, and bake for 15 minutes, the cookie will puff up and fall while cooling, let them cool on the baking sheet.
Reduce the oven temperature to 150°C.
When the cookies cool, dry them again in the oven for 10 minutes.
