Vegetable Barley and Chicken Chowder


Another hearty soup which, hopefully, the kids will like! 
Serves 4-6

4 cups chicken or vegetable stock
1 28 oz can tomatoes and juices
3 cups water
1 large onion, chopped
4 carrots, chopped
1 cup frozen corn kernels
1 red bell pepper, chopped
2 celery stalk, chopped
¼ cup lentils, rinsed well
¼ cup barley, rinsed well
¼ cup green split peas, rinsed well
1 teaspoon dried thyme
2 cups diced cooked chicken

Combine all ingredients except chicken in a large pot and bring to a boil over medium-high heat. Reduce to medium and simmer until all vegetables and legumes are tender and soup is thick, stirring occasionally, about 45 minutes. Mix in chicken, season with salt and pepper.
