A Vegetarian sauce makes lots, freeze the extra
Serves 10
1 tablespoon oil
1 large onion, chopped
1 red bell pepper, chopped
1 clove garlic, minced
½ cup fresh parsley, chopped
1 teaspoon dried basil
1 tablespoon dried oregano
1 bay leaf
½ cup dry red wine
2 tablespoons sugar
2 – 18 fl ounce can tomatoes with juice, coarsely chopped
1 – 14 fl ounce can tomato sauce
2 – 5 ½ ounce can tomato paste
1 – 28 fl ounce can tomato puree
Salt and pepper, to taste
Fresh Parmesan Cheese
Dry Spaghetti Noodles (enough to feed the family)
In a large pot, heat oil over a medium-high heat and sauté onions, pepper, and garlic until soft, about 8 minutes. Add herbs and sauté 1 more minute. Add remaining ingredients, bring to a boil, reduce heat and simmer for 1 hour or longer. Season with salt and pepper. Spoon onto cooked spaghetti and serve passing Parmesan cheese.
